The farms of Soft Wooden Barrel originate from UMANG village, it belong to Central Aceh District.
The Soft Wooden Barrel processing: From the fresh cherries we put the cherries into plastic bags with size 50cm - 75 cm. We do fermentation about 15 days to 18 days. During fermentation the plastics bags need to be up and down.
If already fermented so we dry under the sun for more less 1 months and while drying we need to shake them every hour to get the cherries same dry.
If already dry the moisture around 11 - 12 %so we put into machine to pulp the skin then be beans and handpicked for 3 times. The varieties are mixed Ateng Super and Gayo 1.
