Viva Palestina is a washed Castillo from Palestina, a small municipality at the southern tip of Huila, Colombia, grown by smallholders farming just a hectare or two at 1,700–1,900 m.
Castillo is the variety that simply gets on with it. Bred for resilience rather than glory, it was planted because it survives what other varieties cannot, and is almost never given the spotlight. Roasted light for filter, it earns one anyway: crisp red apple, unrefined panela sweetness, and a clean mandarin finish.
This is a coffee for everyday life—the days you get through rather than remember, filled with small fights, small wins, and the same cup waiting for you tomorrow.

Palestina sits at the southern tip of Huila, next to Pitalito, where the Andes split at the Macizo Colombiano. It's a small municipality of barely ten thousand people, and almost all its coffee comes from farms of a hectare or two, each with its own wet mill where the cherries are pulped, fermented and washed before being dried on raised beds. Volcanic soil and cold nights at 1,700–1,900 m do the rest. Huila received its Denomination of Origin in 2013, and the southern municipalities are where much of the region's quality is concentrated.
