Basma – meaning “smile” in Arabic – captures the bold joy of Aceh’s highlands. Floral and fruity aromas hint at peach and lychee, leading into a vibrant cup of ripe grapes, grapefruit, cacao nibs, and juicy stone fruit. This coffee originates from Pondok village, located in the Bener Meriah District.
The processing is similar to the Soft Wooden Barrel method. Fresh cherries are placed into plastic bags measuring 50-75 cm. The cherries are then fermented for 25 to 30 days. During fermentation, the bags are periodically moved up and down to ensure even fermentation.
Once fermented, the cherries are dried under the sun for about one month. While drying, they are shaken every hour to ensure uniform moisture loss. When the moisture content reaches about 11-12%, the cherries are pulped using a machine, and the beans are handpicked three times to ensure quality. The varieties used are a mix of Ateng Super and Tim Tim.
